Our albino selection (from Huso Dauricus sturgeon, also known as Amur Beluga sturgeon) ranges in color from light cream to yellow-cream. Due to a genetic defect, only 1% to 2% of sturgeons in a harvest can produce caviar with such extraordinary color variations. In the past, albino caviar was reserved only for the Persian Shah because of its rarity.
