Kaluga Imperial Caviar (from the Huso Dauricus sturgeon) is qualitatively between that of the Beluga (Huso Huso) and the Imperial Selection (from the Schrenck/Dauricus hybrid sturgeon). The color of the sturgeon eggs ranges from medium to dark brown and is refined with a golden shimmer. The roe is smooth, even and shiny. With a diameter of over 3 mm, they are characterized by their full-bodied flavor and a distinctive, aromatic aftertaste. The “Huso dauricus” sturgeon reaches sexual maturity at the age of 15 to 20, can live for over 100 years and weigh more than 1000 kg, making it one of the largest sturgeon species. Experts refer to it as the Beluga sturgeon, but it does not originate from the Caspian Sea. The sturgeon are reared in one of the world's most modern sturgeon breeding facilities in China. There is a lake up to 45 meters deep with excellent water quality. Thanks to processing according to ancient Persian traditions by an Iranian caviar master and gentle malossol salting, the highest product quality is ensured.
