With the successful breeding of the Transmontanus sturgeon (from the white sturgeon), the Italian sturgeon breeders have achieved a masterpiece! The very sensitive grain is brown to dark brown and has a diameter of approx. 2.3 mm. However, this caviar is primarily characterized by its incomparable, very fine, beluga-like, creamy taste.
